The Derby Roller Rink 16 Old Route 9 West, Fishkill, New York. That is the current location for Splashdown Beach Theme Park, a water theme park. The skating rink was in a large building in the area of what is Splash Down today.
If that is the case, it may have been demolished.

I skated at the Derby a couple times each week between [19]78 to [19]80. I saw when it was being built that the rink was an light blue epoxy type coating on asphalt. I’m not sure if this is one of the first rinks to use this technique…
I believe the builder/owner when it was built was one of the Cornell sons. His father was a very busy home builder in the 60’s.
I’ll try to reach out to people I knew that skated there to see if any photos can be dug up!
