Both courtesy of Google Map. Top is October 2008, bottom is November 2018. The top showed it was a Chinese Buffet. That perhaps opened in 1990s after the rink closed but then they themselves went out and now, this used vehicle dealership is used.

I do not have much information but got clues. In an article about the Roller Knights rink, Jim Wilheim, the owner of the current defunct rink mentioned about this rink which was cross the street from the Arab Tribune newspapers office but situated kitty corner by far from the newspapers. I assumed it was this building (see photo above) that was appearing in a smaller building. It does look bit like a pizza chain franchise. But it is small place for a small rink because of Jim of Roller Knights said that rink was smaller than Roller Knights. By comparsion, yes, that rink was small alright.
For now, other information. Bizapedia said they filed on October 11, 1972 but it is now as "Exists" whatever that means. They are NOT in business. Its an automotive garage and dealership.
The four co-owners were Bonnie Marie Mathis, James E Mathis, John E Smith, and Judy Gail Smith. They were two couples investing in this tiny rink. The rink floor was smaller than Roller Knights' floor which stood at 73 X 108 / 7,884 SF.

The Exterior.
This unusual style building which tiny bit reassembled to a famous trademarked red pizza chain roof. I would call that Customized Combination. Currently has vertical narrow windows. Currently Red roof and White walled building. Likely was painted for the dealership. It was Brown with Green corners and Tan walled for a Chinese Buffet. The wall apparently were Concrete Blocks thanks to blurred Google Map which can be a plus and the closed up Chinese Buffet. (see photos)
